I love to watch Food Network. So the other night I was watching and on the show I was watching they wanted the chefs to come up with the ultimate grilled cheese. All things went through my head. Grilled cheese is one of my favorite things. I am so excited about this sandwich! The combination of the sweetness of the onion, the tart of the apple, the salty of the bacon and the nuttiness of the bread and cheese are amazing!
- 8 thick slices of center cut bacon
- 1 tbsp olive oil
- 1 onion, sliced
- 1 tsp Kosher Salt
- 2 tbsp dry white wine
- 1 tsp granulated sugar
- 8 slices multi grain bread
- 2 tbsp butter, softened
- 1 Granny Smith Apple thinly sliced
- 8 slices Havarti cheese
Fry bacon until crisp, drain and set aside.
Slice apples and place in bowl, cover with water to keep from browning.
Drain the grease from the bacon skillet and add olive oil. Heat olive oil over medium heat in the skillet. Add onion slices.
Cook until softened, add the wine and deglaze the pan then add salt and sugar and continue to cook until the onion is caramel colored and soft. Be careful not to burn the onion.
Now assemble the sandwich… spread butter on one side of 4 of the pieces of bread and lay butter side down flat in a large skillet.
Place one piece of cheese on each piece of bread. Next break each piece of bacon in half, place 4 halves on top of each sandwich, and now cover the bacon with a layer of apple slices and some onions. Follow up with the other slice of cheese. Butter one side, place butter side up on each sandwich.
Cover with lid and cook over medium low heat. I do it low and slow so I don’t burn them, but they get gooey and melty. Check every few minutes to see if they are browning, flip when desired darkness is achieved on the first side. Repeat for the second side.
Garnish with more apple slices.
Serve with a nice slaw or salad or soup.
