Golden Herb and Feta Rice!

I am making a new Balsamic Herb and Garlic Skillet Chicken dish tonight, too! I needed a zippy and flavorful side for this new recipe. I thought that the tangy creaminess of the feta would be a great compliment to the chicken. Hope so! The golden comes from the veggie broth I want to cook the rice in, a little added flavor and color! I want this meal to be great because my family is finally together for the evening and nobody has to run out the door! I don’t know about you, but sometimes the schedule of this family doesn’t cooperate and when it does, I celebrate! I learned this idea of adding feta to rice from a very dear friend of mine.
1 tbsp. Olive oil
1 onion julienned
1 cup basmati rice, it picks up the color of the broth well
2 cups vegetable broth/stock
2 tsps. Oregano
1 tsp. thyme
1 clove garlic minced
¼ tsp. saffron
Salt and pepper to taste
½ cup feta cheese
In medium sauce pan, heat olive oil over medium heat. Add onion and cook until it becomes slightly translucent.
Now add rice and stir to coat with the oil.
add balance of ingredients EXCEPT for Feta. Bring to a boil, reduce heat, cover and simmer for 15 minutes, until liquid is absorbed.
Remove from heat, stir in feta and let stand 5 to 10 minutes.
Fluff with fork and serve hot.
