Garlic Cheddar Pepper Pasta!

I don’t know if all of you have Aldi stores, but… I do a lot of my shopping there lately! I am always surprised at some of the fun finds is see! They have tons of specialty cheese, great chocolate and junk food! But this week I found these little pasta sides. It was a package of pasta with a season packet. Different flavors. This one was Garlic and Red Pepper. I am going to use my own seasonings based on this for my recipe. I have been overloading on meats lately so I thought we could take a break and have a hearty meatless pasta recipe instead tonight! However, this could be served as a side, too! Enjoy the spicy cheesy goodness!

Serves  6

Ingredients.jpg

  • One pound of your favorite bite size pasta (I used Fusilli)
  • 1 tbsp. olive oil
  • ½ onion finely diced
  • 2 cloves garlic, minced
  • 1 tbsp. red pepper paste
  • 1 tsp. crushed red pepper
  • 2 tsp. cilantro
  • 1 tsp. dried chives
  • 2 tsps. Kosher Salt
  • Cracked black pepper to taste
  • 1 cup light cream (or milk)
  • ¾ cup sharp cheddar cheese grated

Pasta

Prepare pasta as directed on package.

Meanwhile heat olive oil over medium heat in a medium saucepan. Add onion and cook until it becomes slightly translucent.

Add garlic, red pepper paste, crushed pepper, cilantro and chives.

Add salt and pepper and cream. Heat until cream is hot, stirring often so it doesn’t scorch. Whisk in cheddar until smooth and creamy.

Pour sauce over hot pasta and stir to combine. Serve hot.

Tonight I am serving with steam broccoli.
