A few days ago I made an incredible sandwich I did for a guest post for my friend Nicole over at PicNic. They were amazing! When I made this Grilled Chicken and Pesto Sandwich I made my usual Pesto Sauce to go on them and knew I just had to write the recipe down for all of you! Truly one of my favorite garden delights in the summer are my fresh herbs and this is so my favorite way to use them! I use this sauce on pasta, pizzas and sandwiches!
- 1 cup fresh basil leaves
- ½ cup fresh Italian parsley
- ¼ cup pine nuts
- ¼ cup olive oil
- Juice from one lemon
- 2 cloves garlic
- ¼ cup shredded parmesan cheese
- Salt and pepper to taste
In blender, combine basil, parsley, pine nuts, olive oil, lemon juice, garlic, parmesan cheese and salt and pepper.
Blend until combined and in a saucy consistency.
