Easy Fancy Chicken Breasts!

Well, I ended up using more of my left overs last night than I expected leaving me with nothing for my plan I had today! Oh boy… Well, I do have some boneless, skinless chicken breasts in the fridge so I am certain I can come up with something good with those. Hmmm… oh, bacon! I have bacon! And a few asparagus spears, maybe some Swiss cheese? Oh oh oh! This could be good!!
- 2 boneless skinless chicken breasts
- Salt and pepper
- 8 asparagus spears
- 1 cup Swiss cheese, shredded, divided
- ½ tsp. ground mustard
- 8 strips of center cut bacon
Preheat oven to 400°F
Line a cookie sheet with parchment paper
Cut chicken breasts in half, lengthwise and place in a zipper bag. Pound until an even ¼ thick.
Remove chicken from bag and lay on a flat surface. Season with salt and pepper. Trim asparagus to 4” in length and place two spears on top of each chicken breast. Sprinkle and 1/8 cup of cheese over each breast and sprinkle with the ground mustard. Roll tightly and wrap with two strips of bacon.
Place so the bacon ends are down on the cookie sheet. Place in oven for 30 minutes, turning once until bacon is crisp and Internal temperature should be at least 165°F Remove from oven and sprinkle with the remaining cheese and place back in oven for an additional 5 minutes or until cheese is melted.
Serve with a nice salad and side.
