Chili Lime Pork

Tonight is the first night all week I have been home for the evening! Yay! I wanted to make something tasty, but that wouldn’t take too long because I want to have time to do some of the many other things I need to get done! Like blogging… gardening… a little paperwork. I am really excited to have the night off though!
- 1 pork tenderloin
- ¼ cup olive oil
- ¼ cup dry white wine
- Juice from one fresh lime
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. cumin
- 1 tsp. chili powder
- 2 tsp. kosher salt
Slice tenderloin into 2” thick slices and lay in shallow dish.
In a zipper bag mix together remaining ingredients and place pork inside bag, shake to coat. Marinate for at least ½ hour up to 8 hours. Preheat grill to medium heat.
Place pork on grill and cook for 5 minutes, flip and repeat. Check temperature, it should be at 145° F. If it is not, flip and cook an additional two minutes each side.
