Chicken Philly Sandwiches!

I have chicken in the fridge I want to use tonight, try to be a little heathier anyway. I was thinking a salad, but then my Honey mentioned a Philly Cheese Steak that looked so good on Facebook. Well you know I like to make him happy. I know everyone hear likes a good Philly Cheese Steak, so I am improvising.
- 2 chicken breasts, cut into thin strips
- 1 tbsp. olive oil
- 1 onion, thinly sliced
- 1 bell pepper, thinly sliced
- Salt and pepper to taste
- 4 slices of provolone cheese
- 4 hoagie rolls
- Iceberg lettuce, shredded
In a large skillet heat olive oil over medium heat. Add the pepper and onion and cook until onion is slightly translucent.
Add the chicken and continue to cook until chicken is cooked through.
Add salt and pepper to taste.
Arrange the mixture into four portions and top with the cheese. (I only needed to make three tonight) Cover so cheese melts for about 2 minutes.
Remove the portions and place in the rolls. Top with some of the shredded lettuce. Serve hot with salad or with Potato Wedges.
