Chicken Philly Rolls!

I created the Italian Sausage Bread Loaf awhile back and it really was a hit in my house! Very tasty, very filling and very easy! While we were eating it my son suggested the next one I make would be a chicken one. Well, I know how much he loves my Chicken Philly Sandwich so it was a no brainer! But I just wanted a smaller version, you know… individual size!
Prep Time: 15 Cook Time: 30
- 4 Telera Rolls (Any large roll with a crusty crust will work)
- 2 Tbsp. Olive Oil
- 2 Chicken breasts, thinly sliced
- 1 Onion, thinly sliced
- 1 Bell pepper, thinly sliced
- Salt to taste
- 1 cup shredded Mozzarella Cheese
- 2 tsp. Italian seasoning
- 1 Tbsp. Shredded Parmesan
- 2 tsp. parsley
Preheat Oven to 350*
In large skillet, heat olive oil over medium heat. Place chicken in skillet and start to brown. Add onion and pepper and continue to cook until onion is slightly translucent.
Add the Italian Seasoning and salt.
In the meanwhile, cut the tops off the rolls and hollow out.
Place a little mozzarella cheese in the bottom of each roll. Now add the chicken mixture. Top with more of the mozzarella.
Place top of roll back on. Wrap tightly in foil and place in oven for ten minutes. Remove from oven, unwrap and turn oven up to 400*F.
Spray the tops of the rolls with olive oil. Sprinkle tops of rolls with some parmesan cheese and sprinkle with some parsley. Place back into oven, uncovered for an additional 5 minutes.
Remove from oven and serve hot.
