Chicken Philly Rice!

The plan tonight is to make my Chicken Philly Sandwiches for the guys, by request. I am trying however to lighten up what I eat, but I still want to share in the fun! So I am cutting the bread, adding more veg and using some brown rice and lighter on the cheese! All the flavors of one of our favorite sandwiches, but a little lighter for me! That way I don’t miss out and neither do you!
Serves 4 (I am making a mini portion for just me tonight)
- 1 cup whole grain brown rice
- 2 cups chicken stock or water
- 2 Tbsp. olive oil
- 2 boneless skinless chicken breasts, sliced thinly
- 1 onion, coarse chop
- 1 bell pepper, coarse chop
- 1 tsp. Garlic and Herb seasoning
- Salt and pepper to taste
- 4 tbsp. shredded mozzarella cheese
Cook rice with stock or water as directed on package. In a large skillet heat olive oil over medium high heat. Cook chicken until it is starting to brown.
Add onion and bell pepper and continue to cook until it begins to soften. Add garlic and herb seasoning, salt and pepper.
Scoop 1/2 cup of rice onto a plate and top with the chicken and vegetable mixture. Sprinkle a tablespoon of the cheese on top.
Serve hot with a nice green salad or some hot veggies!
