Chicken Cordon Bleu Sandwiches!

It is time for a really good sandwich! I have always found the perfect combination of ham and chicken to be such a winner! I can’t wait to serve this to my guys tonight! I know it will be a hit! Pan seared chicken, ham, cheese… what’s not to like, right??
- 2 large boneless skinless chicken breasts
- Salt and pepper
- 1 egg, beaten
- ¼ cup flour
- ½ cup bread crumbs
- ¼ cup olive oil
- 8 slices deli ham
- 8 slices Swiss cheese
- 4 brioche buns
- 2 tbsp. Dijon mustard
- 2 tbsp. mayonnaise
- 2 tsps. parsley
Pre-heat the oven to 400° F
Cut the chicken breasts in half and pound to about ¼” thickness. Season with salt and pepper. Place the chicken in the egg wash. Put the flour and breadcrumbs in a large bag. Shake the excess egg off the chicken pieces and place them in the flour mixture. Shake to thoroughly coat. Heat olive oil in a large skillet over medium high heat. Place the coated chicken in the hot oil. Cook for 3 minutes, flip and repeat. Check to make sure the chicken is cooked, 165°F when thermometer is inserted in to the thickest part of the chicken. Remove from oil and place on paper towels. Lay all the buns open face on a cookie sheet covered with foil. Place a slice of Swiss on the bottom half of each bun. Lay the chicken on top of the Swiss. Next, place a slice of Swiss on the top halves of the buns. Top that with two slices each of the ham. Pop in the oven and bake for 5 to 10 minutes or until Swiss is nicely melted. While baking, mix the mayo, mustard and parsley in a bowl. Remove sandwiches from the oven.
Spoon the dressing you just made over the ham.
Put the halves together, cut and serve.
