A cast iron skillet recipe! I was inspired when I got two for Christmas this year. I got a lot of inspiring things for my kitchen LOL! I wanted to make a simple one skillet, baked dinner tonight. This is what I came up with.
2 tbsp olive oil
2 boneless skinless chicken breasts, cubed.
1 onion julienned
1 clove garlic minced
3 cups chicken broth room temperature
2 cups Penne or other favorite pasta
½ cup cream
1 cup broccoli florets
1 cup shredded cheddar cheese, divided
Salt and pepper to taste
Preheat Oven to 325*
In large cast iron skillet or regular skillet (you will have to transfer to a casserole dish) heat oil over medium high heat.
Add chicken and brown.
Add onion and cook until slightly translucent.
Add garlic chicken broth and pasta, cook for about 6 minutes stirring occasionally.
Stir in broccoli add cream salt and pepper to taste.
Remove from heat and stir in ¾ cup of cheese. Top with the rest of cheese and pop into oven (if you use a regular skillet transfer into casserole that has been sprayed prior to topping with the cheese and placing into oven).
Bake for an additional 30 minutes until liquid is absorbed and cheese is starting to brown on top.
