Chicken and Pasta Toss!

I have such a tight schedule tonight, but have to put a good dinner on the table! Just like a lot of you! Well, I have left over chicken and pasta and ummm… spinach, what else can I toss in? I know it will be good though! Then Honey will have to clean up the dishes while I run out the door!
- 2 cups of your favorite short cut paste cooked as directed
- 3 tbsp. olive oil
- 1 sweet onion julienned
- 1 clove garlic minced
- 1 cup diced tomatoes
- 2 cups spinach julienned
- 1 tbsp. Italian Herb paste
- Salt and pepper to taste
- 1 cup left over chicken breast, cut up
In a deep skillet heat olive oil over medium high heat, add onion and cook until it becomes slightly translucent.
Add garlic and cook an additional minute. Add Herb paste and salt and pepper.
Now stir in tomatoes and chicken breast, heat through.
Stir in spinach and cooked pasta, heat through.
Serve hot, garnish with some shredded Parmesan cheese if desired.
