Cheesy Spinach Stuffed Chicken Breasts!

If you haven’t guessed I like to stuff chicken breasts with various things to add some variety and fun to our meals instead of just plain old chicken. I think my husband likes, them too! At least most of them. I am hoping this one is no exception!
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- ½ cup whipped cream cheese
- ¼ cup shredded parmesan cheese
- About 20 baby spinach leaves, julienned
- 1 tbsp. minced onion
- 1 tbsp. olive oil
- 2 tsps. Mrs. Dash’s Garlic and Herb Blend
- 1/4 cup Panko Bread crumbs2 tbsp. Shredded Mozzarella
Preheat oven to 425F
Carefully cut a slit in the chicken breasts to create a pocket. Season with salt and pepper. Mix together the cream cheese, Parmesan, spinach and onion. Place half of the mixture into the pocket of each breast, secure with toothpicks. Place on a foil liked baking sheet. Combine the olive oil, mozzarella, seasoning and bread crumbs together and sprinkle over the tops of the chicken. Put in the oven for about 30 minutes until chicken is cooked through and the topping is browned.
Remove from oven and let stand for about 5 minutes.
Cut in half and serve. I served these with Pesto Risotto. Recipe coming soon! These were really delicious! The gooey filling and crunchy topping were to die for! I will be making them again soon!
