Cheese Ravioli with Creamy Chicken and Basil Sauce!

Left over chicken tonight! It is one of those things, trying to create something new, different and tasty for the family when using left over chicken. The one I roasted yesterday had a lot of lemon in it, I think it will be fantastic with the creamy basil sauce!
- 1 cup left over chicken breast, cut up
- 1 package cheese ravioli (of course you can make your own if wish)
- 1 tbsp. olive oil
- 2 cloves garlic, minced
- 1 ½ cups light cream
- ½ cup shredded Parmesan cheese
- Salt and pepper to taste
- 1 cup basil leaves julienned
Prepare Ravioli as directed on package.
While that is cooking heat olive oil over medium heat and add garlic, sauté for about one minute being careful not to burn.
Add cream and warm until hot, stirring often.
Whisk in Parmesan cheese and salt and pepper. When smooth add chicken and heat through until chicken is hot. Return pasta to pan.
Add the basil leaves to the pasta.
Now add the sauce and stir until combined.
Serve hot with a little more Parmesan cheese if desired.
