Cheddar Chive Rice!

I wanted a savory dish to go with the sweet pork I am serving tonight, Grilled Pork Medallions with Cherry Onion Sauce. I have been eating too much pasta the past few days and not in the mood for potatoes, so I have to make my Honey happy and me, too. Rice makes me happy… creamy cheese makes my Honey happy.
Serves 4 to 6
Lost the lid to my cream so I had to improvise with plastic wrap and a rubber band!!
- 1 cup whole grain rice
- 2 cups chicken or vegetable broth
- 1 cup shredded cheddar cheese
- ¼ cup light cream
- ½ cup chopped fresh chives
- Salt and pepper to taste
Cook rice per directions on package using broth instead of water.
Stir in balance of ingredients and serve hot.
