Butterscotch Spice Poke Cake!

Have you ever had poke cake? I love it. I found a recipe over the summer that I tried and my family really seemed to enjoy it. Today I wanted to bake a cake, but you all know… Kecia can’t bake! So I resort to mixes, I was just in the mood to make my Honey some dessert. But, I really don’t like traditional cake with frosting, poke cake is so good, not too sweet, yet gooey and tasty! Plus I just wanted a little autumn flavor! So that is why I chose this combination. Usually with poke cake the recipe calls for gelatin or instant pudding, I don’t care for instant butterscotch I prefer the cook and serve. So… I am going to try it out! We will see how it turns out!
- 1 box of Spice Cake Mix
- 1/3 cup oil
- 3 eggs
- 1 cup water
- 2 3.5 oz. boxes of butterscotch pudding mix
- 4 cups of milk
- 1 tub whipped topping
Prepare cake as directed using a 9 x 13 pan.
When done, let cool for a few minutes then poke several holes into the cake, all the way through to the bottom. Use something that will make large holes, I like my wooden spoon handle.
Prepare the pudding according to the directions on the box. Let cool just a couple of moments. Pour pudding over cake and spread around the top, using a rubber spatula to push it into the holes while spreading it around.
Place in refrigerator and let cool completely. Spread whipped topping over the top. If you like you could sprinkle some chopped nuts over the top. Serve.
