Buffalo Chicken Sandwiches!

This is soooo totally for my Honey! He loves those darned Buffalo Chicken wings! I know, a lot of people do! I just am not a wing girl. I like the sauce, just not the wing. So… I thought maybe if I make this recipe it will satisfy his craving for wings, yet still appeal to me. Plus, he likes grilled chicken, sandwiches… well, food. I love you Honey!
- 4 chicken breasts, pounded to ¼ inch thick
- ¼ cup olive oil
- 1 cup dry white wine, divided
- 2 cloves garlic, minced
- Salt and pepper to taste
- ½ cup of your favorite wing sauce, or homemade
- 8 tbsp. of your favorite blue cheese dressing or homemade (I prefer Ranch)
- 1 cup sharp cheddar cheese shredded
- Slices of red onion
- 4 buns, homemade or your favorite
Place chicken breasts in a zipper bag and pour in olive oil, ¼ cup white wine, garlic and salt and pepper. Seal bag and shake to coat chicken and mix ingredients well. Pour the rest of the wine in a wine glass and enjoy. Let chicken marinate for at least ½ hour.
Preheat grill to medium heat. Place chicken on grill. Grill for 5 minutes on each side or until internal temp reaches 165*F. Remove and place in container filled with the wing sauce. Cover and shake to coat.
Divide the cheese and onion between all the buns.
Place in grill for about 2 minutes, until melted. Remove buns from grill. Place a chicken breast on each bun.
Drizzle with some dressing. Put top on and serve with celery sticks.
I also made a simple and cheating coleslaw… it was delicious!
