Blueberry Almond Streusel Pie!

I am SO excited about this post. I love pie… fruity pie is my favorite dessert. I know a lot of people, including my Honey prefer cake or chocolate. But I really want a piece of pie! Blueberries are easy for me, I buy them in season and freeze them. So when I want them I can grab a handful or a bunch and use them! As you know I am not a baker, but… I am really going to try to make my own crust today for this pie. It is going to be a one crust with a crumbly nutty topping. I hope it is as good on the plate as it is in my head!

Serves 8

Ingredients

Ingredients:

  • One crust for a 9” pie

Filling:

  • 5 cups blueberries (I like a fat pie)
  • ¾ cup sugar
  • 2 tbsp. corn starch
  • 1/2 tsp. cinnamon
  • ¼ tsp. salt
  • 2 tbsp. water
  • 1 tbsp. lemon juice
  • 2 tbsp. butter, chilled

Topping:

  • ½  cup brown sugar
  • 1 cup flour
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract
  • ½ cup sliced almonds
  • 2/3 cup butter, chilled and cut up into cubes

Preheat oven to 375* F

Berries

Place blueberries in large bowl. Sprinkle with the sugar, corn starch, cinnamon and salt. Add water and lemon juice. Stir to coat all berries and set aside for about ½ hour.

Topping

Mix topping: Place brown sugar, flour, cinnamon, vanilla extract, almonds and butter into a large bowl.

Mixed Topping

Mix together with a fork until crumbly.

Crust

Place crust into pie dish.

Stuffed

Stir the berry mixture and pour into crust.

Topped

Top with the topping mixture.

Cover crust edge with foil. Place in oven and bake for 45 – 60 minutes until crust and topping is golden brown and berries are bubbling hot.

Let cool completely before serving.
