Black Bean Enchilada Bowls!

I came across these yummy Taco Bowls in the freezer section of the store and knew I could make them so much tastier and healthier at home. Pack them in containers for a great lunch at work! Packed with fiber and protein! Vegetarian, too! I am excited to eat them this week! I made a triple batch! So yummy!
- 2 corn tortillas cut into quarters, (flour is great, too)
- ½ cup refried black beans (Or cooked black beans)
- ¼ cup shredded 2% sharp cheddar cheese
- ¼ cup enchilada sauce, red or green (or both)
- ¼ cup onion, chopped
Place two pieces of tortilla in the bottom of a freezer/microwave safe container that has a lid. (I used a 2 cup glass Pyrex dish) Spread a little of the beans on top, place a little rice on that, then the corn, scallion, cheese and sauce. Repeat in layers until ingredients are gone, topping off with some of the sauce and cheese. Put lid on and place in freezer if you want to keep it for a few days. Remove from freezer and thaw. Heat covered in the microwave for 2 minutes on high. Check to see if it is hot, if not an additional minute should do.
Be careful it will be HOT! Enjoy!
