Black Bean and Corn Salsa!

I love a fresh and tasty salsa! How about you? A little spice a little tang… pass the chip please! I make this one extra special with the addition of corn and black beans. It is so hearty and flavorful it could almost be a meal, in fact sometimes I put it over a bed of lettuce, sprinkle a little cheese on it with some crunch tortilla strips and I have myself a nice little vegetarian meal. Go vegan and skip the cheese.
Serves a crowd!
- 2 fresh, ripe tomatoes, diced
- Juice from one lime
- ½ cup black beans, drained and rinsed
- ½ cup sweet corn kernels
- ½ red onion, diced
- 1 jalapeno, chopped, veins and seeds removed
- 1 tsp. garlic powder
- 1 tsp. ground cumin
- 2 tsp. dried cilantro
- 1 tsp. chili powder
- Salt to taste
Combine all ingredients in a bowl. Refrigerate for at least one hour for flavors to combine, stir before serving.
Serve with your favorite chips, as a topping or in a salad.
