BBQ Pulled Pork Pasta

We all have them. The dish that doesn’t look good, but wow! It tastes great! I have a couple actually, this one is really yummy. Everyone had seconds, but I must say… it is not very photogenic. I came home and didn’t have enough time to make the soup I wanted, so this is what I came up with using smoked pork out of the freezer. I think pasta dishes are always my go to when I am short on time. Easy, pleasing and filling.
- 3 cups Bowtie or other pasta
- 2 tbsp olive oil
- 1 onion diced
- 1 clove garlic, minced
- 1/s cup beef broth
- 2 cups shredded pork
- 1 cup cream
- ½ – ¾ cups BBQ sauce (depending on how much sauce taste you desire)
- 1 tbsp red pepper paste
- ¾ cup shredded sharp cheddar cheese
- ¼ cup shredded parmesan cheese
- Salt and pepper to taste
Boil pasta per package directions.
Heat Oil in deep skillet over medium heat, add onion and cook until softened, add garlic and cook an additional minute.
Pour in broth and add pork, stir to combine and heat through. Add cream and BBQ sauce, pepper paste heat until cream is hot.
Now remove from heat and stir in cheeses and continue to stir until creamy and melted.
Add the pasta and mix thoroughly.
Serve with a nice green salad.
