Bacon Cheddar Chive Mashed Potatoes!

I think most of you know by now that my Honey loves potatoes! I like to make them for him, too. I love to create different flavorful combinations and one of my favorite blends is cheddar cheese and chives. Add in the bacon! That is a hit! I throw partial packages of center cut bacon in the freezer when I don’t use them for this exact kind of dish!
- 3 medium red potatoes peeled and diced
- 4 cups chicken broth (or water)
- 2 tbsp. crisp crumbled bacon
- 2 tbsp. chopped fresh chives
- ½ cup cream
- 1 tbsp. butter
- Salt and pepper to taste
- ½ cup shredded cheddar cheese
Place potatoes and broth in a large saucepan. Bring to a boil, reduce heat and simmer ten minutes or until potatoes are fork tender. Add all ingredients except for cheddar cheese, mash with a potato masher until smooth.
Whip with a wooden spoon until creamy.
Add cheese and whip until it is melted and blended into potatoes.
Serve Hot. Tonight served with BBQ Pork Tenderloin Medallions and Super Simple Slaw.
